La ricetta della zuppa di cozze del ristorante e pizzeria"Le Parule" di Giuseppe Pignalosa
Al ristorante e pizzeria Le Parule, la zuppa di cozze è un piatto che va fortissimo da almeno trenta'anni.
Taglia extra large per due persone, arricchita con polpo, calamari e gamberi e un tocco stuzzicante di peperonGino della famiglia di Gayenna e prodotto sul Vesuvio.
Nella stagione estiva le ordinazioni raggiungono numeri altissimi perché ai napoletani piace da morire gustare la zuppa di cozze piccante all’aperto nel giardino delle Parùle (gli orti del Vesuvio).
Spicy Mussel Soup
Mussel Soup has been a favorite of guests at the restaurant and pizzeria Le Parùle for nearly 30 years. Made with octopus, shrimp, and a pinch of Cayenne chili pepper grown on Mt. Vesuvius, one serving is enough for two persons. During the summer, there is increased demand for this dish because Neapolitans love to eat this spicy soup al fresco in Parùle's garden in the shadow of Mt. Vesuvius.
Ingredients
Serves 2 persons
1½ lbs. mussels
¼ lb. lupini beans
100 gr di vongole
¼ lb. clams
⅓ lb. calamari
1 lb. octopus
2 jumbo shrimp
2 cloves garlic
5 cherry tomatoes (ideally Piennolo del Vesuvio)
a pinch of Cayenne pepper
2 dried whole-wheat savory biscuits
extra-virgin olive oil
Wash and clean the mussels thoroughly under running water using a knife.
Carefully wash and dry all the other seafood.
In medium-sized sauce pan, boil enough water to cover and then add the octopus. As soon as the water begins to boil again, remove from heat and cool but do not remove the octopus from the water until the water has fully cooled. Strain and reserve the cooking water. As they say in Neapolitan, the octopus must cook in its own water.
In a broad pan, cover and sauté the mussels with a clove of garlic and olive oil until they open.
In another broad pan, sauté a clove of garlic in extra-virgin olive oil together with the lupini beans, clams, calamari rings, shrimp, the octopus, and tomatoes for five minutes. Add the mussels and their cooking water to the pan, stirring all the while. Serve the soup hot over the whole-wheat biscuits.
